Ouma’s Melkkos

There is something wonderfully comforting about a bowl of warm melkkos. Simple, creamy and sprinkled generously with cinnamon and sugar - it is the kind of food that takes you straight back to childhood.

1 liter full-fat milk

60 g real butter

125 g cake flour

½ teaspoon salt

2 tablespoons sugar

1 teaspoon vanilla extract

Extra real butter, for serving

Cinnamon sugar, for serving
Method
Heat the milk and 60 g real butter together in a large saucepan over medium heat. Bring it close to a simmer, but don’t let it boil.
In a bowl, mix the flour, salt and sugar. Add a few spoonfuls of the warm milk and mix to make a thick, smooth paste.
Slowly add the flour mixture to the warm milk, stirring constantly. Keep stirring until the mixture thickens and you have soft little dumplings throughout the milk. Cook for about 8–10 minutes, stirring gently.
Stir in the vanilla and taste. Add a little more sugar if you like it sweeter.
Spoon the warm melkkos into bowls. Add a generous knob of real butter on top and finish with plenty of cinnamon sugar.
Serve warm, preferably around the kitchen table. ❤️
