Bobotie Recipe

Bobotie - The national dish of South Africa is a delicious mixture of curried meat and dried fruit with an egg custard topping.

Serves 2 | Time 45 minutes

Ingredients

  • 3 tbsp Marnella's Kitchen Bobotie Spice Mix
  • 500g mince
  • 1 thick slice of bread
  • 1 cup milk
  • 1 large onion, diced
  • 1 tsp garlic
  • oil for frying
  • 1 tbsp tomato paste
  • 1/2 cup water
  • 1/3 cup sultanas
  • 1/3 cup chutney
  • 1/3 cup slivered almonds (optional)
  • salt & pepper to taste

Topping

  • the excess milk
  • 2 eggs
  • 1 tsp turmeric
  • 1 bay leaf

Method

  1. Soak bread in milk - squeeze out and retain excess milk for topping.
  2. Sauté onions, garlic & Marnella's Kitchen Bobotie Spice Mix.
  3. Add mince, tomato paste, water & bread - Cook +- 10 minutes & stir.
  4. Place the mixture into a medium oven dish.
  5. Beat eggs, excess milk & turmeric together.
  6. Pour egg custard over the mince.
  7. Place bay leaf on top of the egg custard.
  8. Place in a preheated oven - 180°C - bake until golden brown.

Serve

with (yellow) rice, chutney & mixed salad.
