Bobotie Recipe

Bobotie - The national dish of South Africa is a delicious mixture of curried meat and dried fruit with an egg custard topping.
Serves 2 | Time 45 minutes
Ingredients
- 3 tbsp Marnella's Kitchen Bobotie Spice Mix
- 500g mince
- 1 thick slice of bread
- 1 cup milk
- 1 large onion, diced
- 1 tsp garlic
- oil for frying
- 1 tbsp tomato paste
- 1/2 cup water
- 1/3 cup sultanas
- 1/3 cup chutney
- 1/3 cup slivered almonds (optional)
- salt & pepper to taste
Topping
- the excess milk
- 2 eggs
- 1 tsp turmeric
- 1 bay leaf
Method
- Soak bread in milk - squeeze out and retain excess milk for topping.
- Sauté onions, garlic & Marnella's Kitchen Bobotie Spice Mix.
- Add mince, tomato paste, water & bread - Cook +- 10 minutes & stir.
- Place the mixture into a medium oven dish.
- Beat eggs, excess milk & turmeric together.
- Pour egg custard over the mince.
- Place bay leaf on top of the egg custard.
- Place in a preheated oven - 180°C - bake until golden brown.
Serve
with (yellow) rice, chutney & mixed salad.
