One potjie at a time ...

There’s something deeply comforting about a potjie gently simmering over the fire. The kind of comfort that stretches beyond food and time well spent together.

Potjiekos has humble, hardy beginnings. It traces back to the Voortrekkers, who crafted meals from what they had on hand as they travelled. A stew of sorts, made with venison and whatever vegetables were available, slowly cooked in a cast-iron pot over open flames. As pioneers hunted along the way, fresh game from hare, springbok to eland, all found its way into the pot.

It wasn’t just a meal, it was a rhythm of life.

Today, potjiekos still carries that same spirit, though everyone has their own way of doing it. Around our fire, there was always more meat than vegetables (no complaints there), and one rule stood firm: you do not stir the pot. You let it be. You trust the process. And then, there’s the secret ingredient, Royco’s Brown Onion Soup. That rich, savoury magic that brings everything together. If you know, you know.

And if you ask me, nothing quite beats an oxtail potjie. Slow-cooked until the meat falls off the bone, rich and deeply flavourful. It’s the kind of potjie that keeps everyone lingering just a little longer around the fire.

One of my other favourites is the vegetables. The potatoes always go in first, soaking up all those incredible flavours, followed by the rest. And do you remember patty pans, those little, yellow round pumpkins? Yum. They add something special to the pot.

Because that’s the thing about a potjie, it takes time. And that time is the point.

The time it takes to make a potjie is exactly how long a kuier should be: slow, unhurried, filled with stories, laughter, and the occasional check on the fire. No rushing. No stirring. Just being together.
