Smoked gammon for 4-6 people around the Christmas table.
Our beechwood smoked gammon is impossibly tender, easy to slice yet still juicy and delicious. It is very easy to prepare, and goes fantastically well with our homemade orange glaze/sauce.
1. Remove the gammon from its packaging.
2. Add the gammon to a large pot along with carrots, onion and bay leaves. Add enough water to cover the gammon before placing on a medium heat and bring to a gentle simmer.
3. Boil the gammon for 30 minutes per 500g. Remove the gammon and allow to cool slightly before removing skin. Score the fat underneath and place in the oven to crisp the fat slightly at 200 degrees.
4. Once the fat starts to brown, brush with the glaze. Brush every 10 minutes until it is sweet and sticky. Rest for 30 minutes then carve...and enjoy!
