Blend of 2/3 Cabernet Franc and 1/3 Malbec. Whole cluster fermentation using wild yeast, even without any crushing. A slow extraction, with minimal filtration in the end. All of this results in a fresh and lively aroma of crushed red fruit, hints of red currant and wild plums, along with some clove and star anise. The taste is soft and rich, featuring ripe black fruit, a touch of savory notes, and subtle woody undertones supported by juicy acidity. The abundant fruit is balanced by refined tannins, leading to a long finish.
Food Pairing & Occasions
Ideal for accompanying grilled meats, especially lamb and spiced meat dishes. It has the potential to age for several years. Currently, it's at its most delicious state (according to us), but there's certainly no need to rush.
